How trips are planned now
A visitor planning three days in Dubai increasingly asks an AI assistant to build the itinerary: a hotel for a family of four near the beach, somewhere for a Friday brunch, a quiet dinner with a Burj view, a halal-friendly spot near the Creek. The assistant answers with names. Those names come from somewhere, and for hospitality that somewhere is mostly review platforms, Google Maps, and travel and lifestyle media.
The venue's own website is rarely the deciding source. It is often the confirming source, which is a different and useful role: once the engine has a candidate, it checks the site for the facts it needs to recommend it.
What the engines cite
TripAdvisor and Google reviews for ranking and sentiment. Zomato and similar for menus and price levels. Time Out Dubai, What's On and newspaper food sections for "best of" context. Booking platforms for hotels. Instagram barely features, despite being where most hospitality marketing money goes. The engines cannot read it and do not cite it.
Why independents lose by default
Chains and hotel-group restaurants have consistent data across every platform because head office maintains it. Independents often have a different name on Zomato than on Google, an out-of-date menu on one platform, and a website that is a single image with a phone number. The engine, trying to confirm facts, cannot, and recommends the chain instead.
What a venue should do
One identity across platforms. Same name, same address, same phone, same opening hours on Google Business Profile, TripAdvisor, Zomato, the booking platform and the website. Audit it once; it takes an afternoon.
A website that states facts in its first lines. Cuisine, neighbourhood, price range, whether it serves alcohol, vegetarian and vegan options, kids' menu, parking, booking link. These are the facts the engine checks before it recommends. Put them above the photos, not below.
Occasion pages. Visitors ask by occasion, not by restaurant name. A page for each occasion the venue genuinely suits ("Friday brunch in JBR," "business dinner near DIFC," "birthday dinner with a private room") with a direct first paragraph and the practical details. These are the pages that make an independent citable for a question a chain has not thought about.
Menu as text, not image. A PDF or a photo of the menu is invisible to the engines. A text menu with prices lets them answer "what does dinner cost at" and "do they have gluten-free."
Reviews that mention the occasion. Encourage guests to say what they came for. "Great for a family brunch, kids' area" connects the venue to the question.
Structured data. Restaurant or Hotel schema with cuisine, price range, hours, address and menu URL. It is the cheapest way to make the facts unambiguous.
Hotels specifically
Hotel recommendations lean on booking platforms and travel media, and the broad questions are owned by the big brands. Independent and boutique hotels win on specifics: "hotel in Deira near the metro under AED 400," "family hotel in JBR with connecting rooms," "quiet hotel in Al Barsha for business travellers." Each is a page, and each is a question the booking platforms answer badly.
What results look like
Occasion and neighbourhood questions start returning a prepared venue in three to five weeks, Perplexity and ChatGPT search first. Gemini follows as Google Business Profile reviews accumulate. "Best restaurant in Dubai" is a two-year project and the wrong first goal. One extra table a night from AI-planned itineraries is a realistic early result, and it compounds through the tourist season.

Does ChatGPT use TripAdvisor to recommend Dubai restaurants?
Yes, along with Google reviews, Zomato and travel media. The engines treat these as more trustworthy than a venue's own site, so being accurate and consistent on them matters.
Can a small restaurant compete with chains in AI answers?
Yes, for occasion and neighbourhood questions. Chains rarely write pages for 'quiet business lunch in DIFC' or 'halal brunch near the Creek.' An independent that does becomes the citation.
Does posting on Instagram help AI visibility?
Not meaningfully. AI engines cannot read Instagram well and seldom cite it. A text menu, a complete Google Business Profile and occasion pages do far more.
How should a hotel approach AEO?
Target specific traveller situations: budget, area, family needs, business needs. Booking platforms own the broad questions; a boutique hotel wins the specific ones.
